I always tend to stick to automatic (ventured off today ;D ) ...can't remember different settings and what thing should be set at. IS there an easy way to remember, or is it just come with practice?

Great shots. I really like the last one where you kept the subject in focus with the blur in both the foreground & background. What kind of camera / lens do you have? My experience has been that knowing what settings to use comes with lots of practice. After you do it enough, it's like riding a bike.
