They have:
4-D Theater (currently playing 3 movies)
Miniland USA walkthrough of scale Lego models
A mad-mouse ish coaster based on Technic
Bionicle themed tea cup style
Almost Dumbo-style airplane ride, another airplane ride that only goes up in the air around a curve, a helicopter ride that you can control going up and down and spinning (but not too fast)
A dinosaur and a dragon themed coaster (less intense than the mild Disney mountains but more than the Shamu Coaster at SeaWorld or probably Goofy's barnstromer)
A slower "car on track" ride through a safari
A boat ride on a track through Fairy Tale land
A boat ride around a course, no track.
2 car rides for kids, one is just a racetrack curved style, the other is like driving on city streets. ; Kids 100% control the speed and direction of the cars - no track on both
A lift ride powered by humans pulling themselves up on a rope
A Sky Coaster that looks like you can pedal to make it go faster, but in reality it's just a moving ride up over most of the park, great views, not really a coaster.
Lego Factory tour
Adventurers Club walkthrough tour
Firefighting Academy (your group of up to 4) have to move a firetruck by handcart motion to the fire, and then pump the water at the fire by hand and direct streams at a target, all against other families to see who can go it the fastest.
Firefighting show (was under refurb this last trip)
A Duplo playland for the really younger kids
An interactive water zone near the Duplo where you can either cause a water fountain to make music based on motions near it or hand crank water guns towards Lego statues in a pond
Pirate Shores has a pirate boat that goes back and forth, and spin. A tame log ride with maybe a 12 ft drop.
A water based playground structure in the Pirate area
The main pirate ride is a boat ride around the theming where you can handcrank your water cannons towards other boats, the theming, or guests outside the attraction. ;
Mini golf for an extra fee
Medieval themed 3 story play structure with slides, obstacle courses, rope nets, etc.
Pan for gold an extra fee.
slow moving knight on a horse ride around a short track
Knight's Challenge - using a robotic arm you get strapped into it and it then moves you around randomly, including upside down.
Boat tour of the miniland area and main entrance
Pharoah's Challenge area with both a foam ball (shooting) play structure, and a laser gun dark ride (Buzz lite)
A Mindstorms building for the 9+ year olds to build robots
Various lego building stations throughout.
Another boat ride where you are spinning around in a pool; guests can launch water bombs at you during the ride by pushing buttons outside the attraction (which fires off an air cannon under the water, displacing the water upward)
And they now have a lego-themed aquarium outside the main gate for an extra admission (About $10-15 more), we didn't do that this trip.
I think I got all of that...from memory. ; I'm surprised.
